You probably never thought that making mustard was this easy. I will give you the recipe for basic mustard. Once you have made it, you will no doubt come up with new ingredients: Tarragon vinegar, toasted mustard seeds for a nutty flavour, nutmeg, cloves, caraway seeds or with garlic, chilli peppers or honey instead of sugar. Be careful with the sugar: It can change the taste dramatically. Some people like a lot of sugar, others do not like it at all.


  • For 1 jar you will need: 100 g (4 oz) mustard seeds, 200 ml (ยพ cup) white wine vinegar, 1 tsp turmeric, 50 g (ยผ cup) sugar, salt, pepper.

  • For a smoother effect, you can soak the mustard seeds overnight in the vinegar, but this is not absolutely necessary.

  • Place the mustard seeds and the vinegar in a food processor.

  • Add the spices and the sugar.

  • Blitz for approx. 6 minutes until itโ€™s a nearly smooth mustard. You can take longer for a smoother mustard if you so desire.

  • Transfer the mustard to a jar, close the lid and place in refrigerator until used. It will get better with time.
