Oof’s Barbecue Sauce

Oof makes a divine, very American, barbecue sauce, which I spoon up straight from the pan on bread.


  • 500 ml (16 fl oz/2 cups) ketchup
  • ½ can dark beer
  • 100 ml (3 fl oz/½ cup) red wine vinegar
  • 50 g (approx. 2 oz/¼ cup) raw caster (superfine) sugar
  • 2 tbsp Worcestershire sauce
  • salt, to taste
  • 1 garlic clove, finely chopped
  • pinch cayenne pepper
  • 100 g (approx. 4 oz/1 stick) butter
  • 1–2 tbsp jalapeño peppers, chopped


Cook all ingredients in a saucepan on low heat into a thick sauce. Leave to cool or serve warm, either way.
