Rice cooked this way is excellent for any barbecue party. You can make nasi jaha well in advance and reheat them on the barbecue for 10 minutes or so, turning them a few times so they heat evenly all round.

These rice cakes are flavoured with lemon grass, shallots, ginger and pandanus leaf. The recipe comes from Manado, where they are cooked in bamboo segments. The uncooked rice and other ingredients are put into sawn-off lengths of green bamboo, in the proportion of half rice and h
