  • 25 g/1 oz fresh/compressed yeast

Method

  1. Mix the yeast and water together in a small bowl. Add the sugar and 30 ml/2 tbsp of the flour. Leave in a warm place for about 30 minutes, or until it becomes frothy.
  2. Place the rest of the flour in a mound on a clean work surface, make a hollow in the centre and add the salt. Stir the yeast mixture thoroughly, and then pour it into the hollow and knead it into
