This is our version of pickled cucumber salad. Oi means “cucumber,” and jangachi means “pickled vegetables.” The cucumbers are dressed with sesame oil, chile flakes, scallions, and sesame seeds after they have been pickled for two weeks. Steps one through five are simply making plain cucumber pickles: You could use them in the Miyeok Oi Muchim salad or any way you like.
