This is not a traditional Lombardian dish, it’s one I created when I saw how similar the spit over an Aussie barbecue is to a traditional spiedo. In Lombardy, we don’t cook fish on the spiedo, but I thought why not – Aussies are happy to barbecue anything! Cedar wraps, available from barbecue stores, add a lovely scent and smoky aroma to the fish.
