In Lombardy, we make a similar dish to this using very small wild birds when they are in season. This is the version we make during the rest of the year when the birds aren’t available – using pork neck. The name literally means ‘missing birds’. It’s also sometimes prepared for small children who find the taste of the gamey birds too bitter.
