  • 75 g/2½ oz butter, diced
  • 150 g/5½ oz/heaped ¾ cup dark muscovado sugar
  • 150 ml/5 fl oz/scant ⅔ cup double cream
  • 1 tsp vanilla extract


Melt the butter in a saucepan over a medium heat. Add the sugar, cream and vanilla extract and stir until the sugar dissolves, then bring to the boil. Immediately reduce the heat to low and simmer for 5 minutes until the sauce thickens. Serve hot.
