I haven’t bought salad dressing in probably five years. It’s so easy to make at home, and it’s a great way to save some money. Also, most store-bought dressings use fairly cheap ingredients. There are a few dressing recipes scattered throughout this book (see the Steakhouse Salad and the Sesame Salad), but below is my standard dressing recipe that I almost always have at the ready in our house. There is no chopping or anything complicated involved in this dressing recipe. You can mix up a batch in under a minute. If you Don’t have a salad dressing jar, you can use an old mustard jar. Just shake all the ingredients together really well.

Ingredients

  • ½ cup neutral oil (Something like sunflower, safflower, or even canola. Olive oil has too strong a flavor.)
  • ¼ cup tarragon vinegar (No substitutions! It’s in your vinegar section. Find it. Okay? But apple cider vinegar is pretty good too.)
  • ¼ cup sugar or honey
  • 1 teaspoon kosher salt or ½ teaspoon table salt
  • 1 teaspoon ground pepper
  • ½ teaspoon hot sauce (I like Cholula, but any hot sauce will work.)
