Star Anise Powder

• 100 g star anise

Dry-roast the star anise in a wood-burning oven until it starts to change colour, then blend it in a blender or spice grinder to form a powder. Seal in an airtight container to use as needed, and don’t make too much, as this flavour is lost as the days go by.
