  • 8 rooibos tea bags
  • 350 ml cold water
  • 20 g honey
  • 15 g castor sugar
  • 10 g lemon juice
  • 5 g agar agar


Soak the rooibos tea bags in the water for 2–12 hours. Remove the tea bags and measure out 300 ml of the tea for this recipe.

Heat the tea in a pot over medium heat. When boiling, whisk in the agar agar. Allow the tea to boil for 90 seconds while whisking to activate the agar agar. Pour into a tray and leave to set in the fridge.

Once set, transfer to a Thermomix jug and blend on full speed until smooth. Reserve in a piping bag in the fridge until needed.
