Stilton Mousse Pancakes

Ingredients

  • 175 g (6 oz) Stilton
  • 75 mls (3 oz) cream
  • 1 tablespoon clear mild honey
  • 4 freshly made pancakes

Method

Cream the Stilton with a fork or in a food processor, and blend in the cream and honey. Divide the mixture amongst the pancakes, and fold into parcels, or tie into bundles with chives. Serve cold, or heat through in the oven for a few minutes.
