Frizzled Turkey

Ingredients

  • 400 g (14 oz) pulled dark turkey meat
  • 1 teaspoon each freshly ground black pepper, paprika, allspice and cumin
  • ½ teaspoon each salt, cayenne, or chilli and mustard powder

Method

Mix the dry ingredients, and roll the turkey pieces in this spice mixture.

Heat about 5 cm (2 inches) olive oil in a wok, and when very hot, briefly fry the turkey, until heated through and nicely browned and frizzled. Drain on kitchen paper before serving.
