Perfect Plain Rice

Julia Child once told my husband, David, that she thought cooking plain rice for more than two people was one of the hardest things to do. It is and it isn’t. Each riceeating culture has its own unbreakable rules, and within those cultures, cooks have their own magic formulas handed down from generation to generation. To listen to them all can get you very confused. Many rice-consuming families now resort to an electric cooker, but although we have one, we used it only when we had to manage
