In Parsi Gujarati, bananas and plantains are both called kera. What we know here as plantains are described as tarvana kera (bananas to be fried). Tarvana kera become tarela kera (fried plantains), which are served as part of the middle of the meal rather than at its end, just as they are in Latin American cuisines. This recipe serves four, but it’s no problem to adjust it for any number; just make one plantain per person.
