Pen some daring predictions for the secret notes inside these crisp vanilla-scented cookies. Of course you can buy them from Chinatown (not as fresh or delicious) but the personal messages wouldn’t be the same.

Preparation: 15 Minutes, Plus 30 Minutes Chilling

  • 75 g ( oz/½ cup) plain (all-purpose) flour, sifted
  • 150 g (oz/ cup) caster (superfine) sugar
  • 1 teaspoon natural vanilla extract
  • 75 g ( oz) unsalted butter, melted
  • 18 small pieces of paper with chosen message scribed, then folded


Preheat the oven to 160°C (315°F) or 140°C (275°F) fan forced. Line two large baking trays with baking paper. Draw six 10 cm (4 inch) circles on the paper on each tray.

Put the flour, sugar, vanilla and butter in a bowl and whisk until smooth. Cover and refrigerate for 30 minutes.

Using the drawn circles as a guide, spoon one scant tablespoon of batter into each 10 cm circle and spread evenly with a palette knife. Only bake one tray at a time, as you will need to work reasonably fast to shape and fill the cookies before they harden. Bake for 10 minutes or until light golden. Remove from the oven and flip over with a palette knife. Working quickly, place the message on one half of the cookie, then fold in half, press to seal well and bring the corners of the semicircle together.

Set each cookie over the rim of a cake tin to make the indent along the bottom. Repeat with the remaining mixture.
