Pen some daring predictions for the secret notes inside these crisp vanilla-scented cookies. Of course you can buy them from Chinatown (not as fresh or delicious) but the personal messages wouldn’t be the same.
Put the flour, sugar, vanilla and butter in a bowl and whisk until smooth. Cover and refrigerate for 30 minutes.
Using the drawn circles as a guide, spoon one scant tablespoon of batter into each 10 cm circle and spread evenly with a palette knife. Only bake one tray at a time, as you will need to work reasonably fast to shape and fill the cookies before they harden.
Set each cookie over the rim of a cake tin to make the indent along the bottom. Repeat with the remaining mixture.
