Use this refreshing dipping sauce for fried food, grilled meat or noodles.


  • 2 garlic cloves
  • 2 long red chillies, seeded and chopped
  • 200 ml (7 fl oz) rice vinegar
  • 200 g caster (superfine) sugar
  • 2 teaspoons fish sauce
  • juice of 1 lime
  • 1 tablespoon finely chopped red Asian shallot
  • 50 g (1¾ oz) Lebanese (short) cucumber, finely chopped


Put the garlic and chilli in a mortar and pestle and pound into a paste. Scrape into a saucepan, then add the vinegar, sugar and a pinch of salt. Stir over medium heat until the sugar dissolves, then simmer for 6-8 minutes or until reduced and syrupy. Remove from the heat, add the fish sauce and stand until cool. Stir in the lime juice, shallot and cucumber.
