  • ½ cup sifted all-purpose flour
  • ½ teaspoon salt
  • teaspoon baking soda
  • 1 egg
  • 1 cup light or dark brown sugar
  • ½ teaspoon vanilla extract
  • 1 cup blanched almonds


    1. Preheat oven to moderate (325°F.).

    2. Sift the flour, salt and baking soda.

    3. Beat the egg until it is light and foamy. Add the brown sugar and vanilla and beat well. Stir in the flour mixture and then the almonds.

    4. Grease a shallow pan (8 × 8 × 2 inches) and spread the mixture into it with a spatula. Bake for twenty-five to thirty minutes, or until top is firm with a crust. While warm cut into squares, about two inches each. Cool before taking from the pan.
