There’s no better fish for blackening than tuna. By wonderful coincidence, no method of cooking tuna is better than blackening. The essential thing to know is that blackening fish creates a terrific amount of smoke and perhaps flames. It’s best done outdoors over a very hot fire. And don’t be shy about getting the heat up there—it can’t possibly be too hot.
