Here’s a tart, refreshing salad dressing that’s especially good on bitter greens like arugula, radicchio, endive, or frisée.


  • 1 tsp. Dijon mustard
  • 2 Tbsp. lemon juice
  • 1 Tbsp


Combine the mustard, lemon juice, vinegar, and 2 tablespoons of cold water together in a bowl with a wire whisk. Add the oil in a slow stream, whisking constantly, until incorporated fully. Add the salt and pepper, and toss with salad greens. This dressing can be stored, refrigerated and covered, fo
