The distinguishing feature of a Belgian waffle is that its batter is lightened with foamed egg whites. This gives it a wonderful, airy quality that’s best appreciated when the waffle iron has big squares. To make a waffle come out crisp, put a substantial amount of butter into the batter. That increases the temperature at the point where the batter meets the iron.
