The essence of a good blackened dish is the seasoning blend with which it is encrusted. During the past several years, many companies have come out with blackening seasonings, usually at prices far beyond what the ingredients cost. I always make my own, which allows me to make it to my taste. This one is appropriately spicy without being insane.
