Risotto

A risotto is the most perfect one-pot meal. It does require a little more attention than some of the dishes in this book, but is excellent when you get home and discover you haven’t got anything to eat and somebody’s dropped in. It is terribly easy to make. You can conjure up risottos with absolutely anything that takes your fancy, so I’m just going to give you a basic risotto recipe.
