This is another version of chocolate-coated Florentinas. Layered Florentina Squares provide the same well-liked combination of nuts, caramel, and candied fruit covered with chocolate, but, by sandwiching a layer of short dough between them here, you introduce a whole new textural dimension. Take great care not to overbake the sheet in Step 2 or 3, or it will become too brittle, and the cookies will be difficult to cut attractively.
