Strawberry-Lime Sauce

  • 2 pounds (910 g) fresh strawberries

Method

  1. Remove the hulls from the strawberries (a small melon ball cutter works well for this). Wash, puree, and strain the berries.
  2. Add the sugar, honey, and lime juice. Stir the cornstarch into a small part of the liquid, then mix into the remainder.
  3. Bring the sauce to a boil and cook for 2 minutes over low heat to eliminate any aftertaste from the cornstar
