Unlike Trinidadian dumplings, Jamaican dumplings are deep-fried and rich with butter for a light fluffiness that floats well in soup. I have to order a portion of these every time I visit Etta’s.

Ingredients

  • 375 g self-raising flour
  • pinch of salt
  • 15 g bu

Method

Put the flour and a pinch of salt into a bowl, and then rub in the butter with your fingertips to get a breadcrumb-like texture. Stir the sugar into the soda water and then add it to the flour a little at a time, mixing swiftly but gently with your hand until you have a firm dough.
