This colourful salad is not only pretty, it is also very refreshing and moreish! I served this with fish cutlets on MasterChef UK, and I received fantastic reviews from all the judges. This simple and quick salad delivers a burst of flavour and also acts a palate cleanser. It will keep for a day or two in the fridge, so I always make extra to snack on.


  • 1 medium red capsicum (bell pepper), cored and diced
  • 1 medium green capsicum (bell pepper), cored and diced
  • 1 small red onion, peeled and finely chopped
  • A handful of coriander leaves, finely chopped
  • 1–2 Tbsp lime juice
  • 1–2 Tbsp of sugar
  • 1 tsp salt
  • 1 large medium ripe mango, peeled and diced


  • Place the capsicums, onion and coriander in a large bowl.
  • Place the lime juice, sugar and salt in another bowl. Beat with a whisk, then add to the capsicum mixture. Toss to mix.
  • Taste and adjust the seasoning, if needed. Gently stir in the diced mango just before serving.
