If I ask my kids what they want for dinner, given anything, they almost always ask for salmon. I love it when they do because it’s so healthy, easy, and delicious. The key is to start with good salmon. I prefer to purchase wild-caught king salmon, which is a bit pricey but a rare and healthy treat, so I think it’s worth it. The omega-3s alone are a powerful enough reason to devour it. Serve with Mashed Potatoes.

Ingredients

  • pounds skin-on salmon fillet
  • Sea salt
  • Extra virgin olive oil, for cooking

Herb Dressing

  • ¼ cup extra virgin olive oil
  • 3 tablespoons chopped fresh Italian parsley leaves
  • 2 tablespoons chopped fresh dill leaves
  • 1 small clove garlic, finely chopped
  • Sea salt

Method

  1. Cut the salmon fillet into 4 equal pieces and sprinkle with some salt.
  2. In a large cast-iron skillet, heat a little oil over high heat. Add the salmon, skin-side down, and cook for about 5 minutes, or until the skin is crispy. Cover with a lid and cook for 1 minute more (or turn the fish and cook without the lid), or until cooked to your liking.
  3. Meanwhile, to make the herb dressing: In a small bowl, stir together the oil, parsley, dill, garlic, and salt to taste.

To serve, drizzle the salmon with the herb dressing.
