  • 1 kg (2 lb 4 oz) frozen raspberries
  • 100 g ( oz) pure icing (confectioners’) sugar

Method

Place the frozen raspberries in a metal bowl and dust with the icing sugar. Cover with plastic wrap and place above a saucepan of simmering water. Leave for 1–1½ hours until all the juice has run out. Carefully remove the bowl from the heat and leave to cool. Strain the raspberries through a fine sieve lined with an oil filter into a bowl and refrigerate overnight to fully drain.

Measure out 500 ml (17 fl oz/2 cups) of the raspberry juice into a container. Refrigerate until required.
