Slice the tomatoes into 3 or 4 rounds around the centre. Arrange in a single layer on a flat plate. Sprinkle with salt, sugar and several grinds of pepper. Toss immediately in just enough French Dressing to coat, and sprinkle with chopped mint or basil. Taste for seasoning. Tomatoes must be dressed immediately they are cut to seal in their flavour.
