  • 1 tablespoon olive oil
  • 30 g (1 oz/½ cup) panko breadcrumbs
  • 1 small garlic clove, crushed
  • finely grated zest of 1 lemon
  • 1 tablespoon finely chopped flat-leaf (Italian) parsley or basil


Heat the oil in a large frying pan over medium–high heat. Add the breadcrumbs and cook, tossing the pan regularly for 4–5 minutes until the breadcrumbs are lightly golden. Add the garlic and a pinch of sea salt and cook for 1 minute more. Remove from the pan and stir in the lemon zest and your choice of herb.
