Ingredients

  • 2 medium brown onions
  • 3 stalks celery
  • 5 kg chicken bo

Method

Peel and slice the onions. Wash the celery stalks well, then cut them into 2cm lengths. Place all ingredients in a 10-litre stockpot and bring to just before the boil, removing any impurities that rise to the surface, then reduce the heat and simmer gently for 2 hours.

When it has finished simmering, remove stock from heat and let stand for 20 minutes. Strain into a 5-litre container an
