This is a very versatile spice mix: as both the spices and nuts are roasted, there is a warm, rounded flavour to the mix, lifted by a kick of chilli and refreshed with mint. Originally from Egypt, but enjoyed in different parts of the Middle East, the word ‘dukkah’ is derived from the Arabic word for ‘to pound’, as the key to the mix is to pound and crush the spices using a mortar and pestle rather than grind them to a powder, as you are looking for texture as well as flavour.
