This sauce is often found on tables at food stands right next to the ketchup. Trinidadians put it on almost anything, but particularly on the Shark and Bake sold at Maracas Bay Beach.

Ingredients

  • ½ cup shado beni or cilantro leaves, finely chopped
  • 4 cloves garlic

Method

  1. Place the shado beni or cilantro, garlic, canola oil, and hot pepper in the bowl of a food processor or blender and pulse to a smooth paste. Add the vinegar and pulse once or twice more.
  2. Store, refrigerated, in a tightly sealed glass jar.
