The basic flavor profile is comprised of bitter flavors and the way they interact with each other. Wormwood has a flavor reminiscent of Angostura bitters. It is also one of the ingredients in the original absinthe liqueur and is often maligned as a substance that induces hallucinations. Extracts contain a much smaller proportion of thujones (the component that may be toxic in large quantities) and are harmless. The bitterness from the chocolate is more familiar. These two flavors play off each other with a unifying theme but are clearly distinct. The quark chocolate has more of a sweet-sour dairy note that helps bind all of the flavors together and adds texture with its snap.
