Espresso Velvet Spray

Ingredients

  • Dark chocolate 500 g 1 lb 1.64 oz 49.02%
  • Instant coffee powder 20 g .71 oz 1.96%
  • Cocoa butter 500 g 1 lb 1.64 oz 49.02%

Method

  1. Combine all of the ingredients in a bowl and melt over a hot water bath. Coffee powder dissolves faster in water than in fat, so it will take a few minutes of stirring to fully dissolve the crystals.
  2. Fill the spray paint canister and spray the cakes, or reserve at room temperature in an airtight container. Discard after 6 months.
