Method

Method of Preparation

  1. Peel potatoes.
  2. Chop chives finely.
  3. Melt butter.
  4. Measure flour onto plate.

Method of Cookery

  1. Cook potatoes in boiling water and salt–remove skins.
  2. Dry over low heat as shown above.
  3. Brush with melted butter and chopped chives.
  4. Dust with flour and serve at once.
