Comment of Method

I have broken a rule in this case. This is not a basic batter—recipe 214 will serve that purpose. This is a beer batter and is, in my humble opinion, the only batter to use with fish—it is fantastic. This recipe was supposed to have originated at Madame Prunier’s restaurant in London.
