Here it is—my favorite culinary ingredient! I sometimes worry about my constant reference to clarified butter but this is always pushed under by the satisfaction I get from using it. This method is very simple and the butter produced will not burn until it reaches 400°F. This should be hot enough for all your kitchen work.
