Fried onions are suggested as garnish for a number of recipes in this book. You can, of course, buy them ready-made: Scandinavian fried onions are sold in plastic tubs in most supermarkets, and Thai shops make them from the little red onions, not quite shallots, that are found in many Asian countries.
