  • Basmati rice
  • Salted water

Method

  • Boil lots of salty water as you would to make pasta.
  • Wash the rice in a sieve, running water through it.
  • Throw the rice into boiling water and cook for five to six minutes – it should be just softer than al dente. Don’t let it cook to soggy.
  • Pour all the water out through the sieve.
  • Return rice to the pot.
  • Cover and turn heat down to the lowest setting for five minutes. Take off the heat and leave for a further five.
  • Quantities depend on how many you want to feed. One cup of rice feeds about three people.
