Ingredients: 2 tablespoons oil; few peppercorns; blood from the hare; bay leaf; 450 g/1 lbsmall onions; 25 g/1 oz butter; 225 g/8 oz button mushrooms, trimmed; few parsley stalks; 15 g/1 oz cooking fat; ½ bottle red wine; 1 hare, skinned and cut in joints; 2–3 streaky bacon rashers; seasoned flour; 1 clove garlic; 1 large onion, finely chopped
