Roasting green beans gives them depth of flavor and complexity just as it does roasted asparagus. A topping of grated Parmesan creates a crisp, frico-like crust.

Ingredients

  • pounds thin green beans or haricots verts, trimmed
  • 1 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper

Method

Preheat the oven to 400°F. Arrange the beans on a nonstick rimmed baking sheet and sprinkle with the cheese. Roast until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Use a spatula to transfer the beans to a platter and season with a little salt and pepper.
