Ingredients

  • 10 egg whites
  • cups sugar
  • ½ teaspoon cream of tartar

Method

Place the egg whites and sugar in a stainless steel bowl or the top of a double boiler. Place over simmering water and whisk continuously until the mixture is warm (about 120°F). Transfer the mixture to the bowl of a stand mixer and beat on high speed until peaks form and the meringue is completely cooled, 10 to 15 minutes.
