YKHYCDT: ground pork

  • 1 tablespoon extra-virgin olive oil
  • 4 slices nitrate-free ham or Canadian bacon
  • 4 large eggs
  • hot sauce
  • maple syrup (omit for Whole30)

Method

Heat the oil in a large, nonstick skillet over medium-high heat for 2 minutes. Add the ham and cook, undisturbed, 2 minutes; flip and brown the other side, then transfer to a plate. Reduce the heat to medium, then crack the eggs into the pan. Partially cover the pan to trap some heat in there, and cook the eggs for 3–4 minutes, depending on how you like the yolks.

To serve

Top each burger with a slice of ham and a fried egg, then drizzle with 1 teaspoon of maple syrup and a few shakes of hot sauce. Die happy.
