A meal-in-a-dish supper that is adaptable to many flavours. Try sage, winter savory or rosemary instead of thyme, or use spices such as fennel seed, crushed coriander or juniper. Instead of the maple syrup or honey and cider combination use white wine or Marsala.

Ingredients

  • 3 tablespoons sunflower oil
  • 250 g sweet potatoes, sliced

Method

Preheat the oven to 180°C/350°F/gas mark 4. Lightly oil a small gratin or similar ovenproof dish. Spread the sweet potato slices over the bottom of the dish and season with salt and pepper. Heat the rest of the oil in a frying pan and fry the onions until browned. Lift them out
