It seems to be only recently that the monkfish has been used for food. At one time it would have been thrown back or used as bait, but not now. Monkfish has gained quite considerably in popularity, probably because it was so cheap, but, as with everything else, now that it has become more sought after, up goes the price. Having said that, however, it is still a cheap fish with very little wastage.
Apparently, monkfish is or once was used by the frozen food industry in place of scampi; the theory being that the texture is similar to that of scampi and once in those dreaded breadcrumbs no one can tell the difference. So beware if you buy what seems to be cheap scampi!
