  • About
  1. Lay the fish on the work surface with its head away from you. Make an incision along the dark line through to the bone from head to tail.

  2. Slide the knife under each fillet, angling it towards the bone as you cut.

  3. Continue cutting until free.

  4. Remove the other fillet, turn the fish over and repeat.
