  1. Hold the oyster in a cloth so that the flat side is uppermost. Using an oyster knife, push into the hinge and twist.

  2. Slightly prise the shells apart down the inside of the flat shell. Pull off the shell.

  3. Remove the oyster from the concave shell by freeing it with the knife.

  4. The oyster is now ready for use. If liked, keep the shells for decoration.
