I use several sizes of tart pans in the book for variety; however, you do not have to own this many to use the recipes (all the tart recipes herein offer pan substitutions where applicable). Tart pans have a removable bottom that makes it easier to remove the tart from its pan. When storing mini tart pans, we suggest layering them between sheets of paper towels or parchment paper to make sure they do not stick together while nesting.
